COW'S BUTTER

Pure cow butter from animals raised entirely on pasture in the foothills of the Rila and Rhodope mountains. The butter is used for spreading or as a seasoning, as well as in cooking - for baking, making sauces or frying. Due to its many uses, the oil is consumed daily in many parts of the world. Butter consists of milk fat surrounded by small droplets, composed mostly of water and milk proteins. When cooled, the butter solidifies and at room temperature it softens to a spreadable consistency. The butter melts to a thin liquid at a temperature of 32-35 °C. The colour of the oil is usually pale yellow, but can vary from bright yellow to off-white.

BUTTER LATTERIA SORESINA

The oil has truly ancient origins, dating back to 1500 BC, in India. Still butter is obtained from the best cream of milk or whey. Of course, the freshness of this simple ingredient is essential: the less time between the production of cream and its processing, the less processing required and the better the resulting butter will be. Pasteurisation and maturation then help to refine the product's organoleptic qualities. It is not only the freshness, but also the pasteurisation of the cream, its repeated washing and the addition of lactic ferments that make Sorezina's recipe unique. Thanks to the daily collection of milk, Latteria Soresina is able to apply this technique with method and knowledge to always offer good products.
