Schola Sarmenti
Schola Sarmenti is a prestigious winery in Southern Italy, located in the Nardò area of Puglia, where the warm Mediterranean climate and coastal influences create ideal conditions for cultivating indigenous red grape varieties with remarkable intensity and character. Negroamaro, Primitivo, and Susumaniello form the foundation of the winery's identity, giving its wines a distinctive regional expression.
The winery is dedicated to showcasing the full potential of its terroir and the natural character of its grapes. Every harvest is carried out entirely by hand, with meticulous selection taking place directly in the vineyards to ensure only the highest-quality fruit is used. The grapes then undergo gentle crushing and temperature-controlled fermentation, allowing for the extraction of deep color, refined tannins, and an expressive aromatic profile while preserving freshness and balance.
Many of the wines are matured in a combination of French and American oak barrels. The aging period varies according to the style of each wine—from shorter maturation designed to preserve vibrant fruit expression to extended aging that produces wines of greater complexity, structure, and longevity. This process enhances the wines with elegant notes of spice, dark chocolate, tobacco, and dried fruit, beautifully complementing the ripe fruit character typical of Southern Italian grape varieties.
Schola Sarmenti is particularly renowned for its concentrated and powerful red wines, which successfully combine intensity with elegance—a hallmark of the Salento style. Rich in color and layered with aromas of dark berries and black fruit, the wines display impressive structure and balance, making them equally enjoyable in their youth and well suited for extended bottle aging.
